agassifan veggie asiago frittata w/ flax seed meal

1 small yam grated, skin on8 thin medium asparagus spears, sliced thin1 cup eggbeaters (or 4 eggs, beaten) 1 small tomato sliced thin and chopped1 cup cabbage, shredded, and chopped fine1 tbsp garlic flavoured olive oil2 tbsp flax seed meal1.5 oz grated asiago cheeseblack pepper, freshly ground
1) Heat garlic oil in small ovenproof skillet, and saute veggies (for 5-8 minutes), when oil is hot.
2) Add flaxseed, freshly ground black pepper (other herbs may be added at this time also...I like basil in mine), and mix well...saute two more minutea.
3) Sprinkle shredded Asiago over veggies and pour eggbeaters (or 4 fresh beaten eggs) over hot veggies, leave over burner 1-2 minutes.
4) Place skillet in toaster oven/reg. oven (that was preheated to 350 degrees) and bake for 20 minutes.
Makes two huge servings (under 300 calories) or 3 servings for under 200 calories.
