Whole Wheat Pumpkin Spice Pancakes

Ingredients
1 1/2 cups whole wheat flour1 Tbsp baking powder1 tsp pumpkin pie spice 3/4 cup pumpkin puree(not pumpkin pie filling)1 cup nonfat buttermilk(2 tsp lemon juice then add skim milk ) plus extra milk as needed to thin mixture2 egg whites, lightly beaten
Directions
In large bowl, mix dry ingredients. Add pumpkin puree, 1 cup milk and egg whites. Add small amounts of milk, stirring well until desired consistency is reached. Use 1/4 cup mixture for each pancake and cook over medium heat on non-stick griddle with cooking spray.
