Ingredients
Directions
1/2 tsp Baking Soda2 tsp Baking Powder1-1/4 Cups All Purpose Flour3/4 Cups Whole Wheat Flour1 Tbsp + 1 tsp ground Cinnamon1/2 tsp Salt 1/2 tsp Ground Ginger1/8 tsp Ground ClovesBrown Sugar, 1 cup, packed Vanilla Extract, 1 tsp 2 Cups unsweetened applesauce (divided into 1/2 cup and 1-1/2 cups)1 Large whole eggs1Egg white1 Tbsp Butter, Unsalted1/4 Cup chopped WalnutsFor frosting5 ounces cream cheese, softened1 tablespoons unsalted butter, softened1/4 teaspoon pure vanilla extract1 cup Confectioners sugar1 teaspoon Cinnamon
Preheat oven to 350°F with rack in middle. Butter an 8- or 9-inch square cake pan. I lined mine with parchment paper and sprayed it with Pam for ease in getting out of the pan.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
In a large bowl, beat 1/2 cup applesauce, brown sugar, and vanilla with an electric mixer at high speed 2 to 3 minutes. Add eggs one at a time, beating well after each addition. Beat in the remainder of the applesauce. At low speed, mix in flour mixture until just combined.
Spread batter evenly in pan and bake until golden-brown and a wooden pick inserted into center comes out clean, about 35 to 40 minutes. Cool in pan 15 minutes, the move to a cake rack to cool. You can speed this up by putting it in the fridge.
Make frosting: Beat cream cheese, butter, and vanilla with an electric mixer at high speed until fluffy. Sift confectioners sugar and cinnamon over cream cheese mixture, then beat at medium speed until incorporated. Spread frosting over top of cooled cake
