Dan's Beef & Veggie Spanish Rice

1 1/2 cups uncooked brown rice500 gm lean ground beef1tbsp olive oil3/4 cup chopped onions1 cup chopped red pepper1 stalk celery, chopped1 cup chopped zucchini1 cup chopped mushrooms2 14oz cans of chopped or diced tomatoes2 tbsp oregano OR Italian seasoning (we prefer this)1 tsp salt1/2 tsp pepper
Cook the rice in 3 cups water, using a large pot capable of holding the rest of the ingredients. takes @ 40-45 minutes.
In a large saucepan brown the ground beef, drain any fat and set aside.
In the same pan, using olive oil, saute onions, peppers and celery about 5 minutes until onions begin to turn soft.
Add zucchini and mushrooms, continue cooking until mushrooms are almost cooked.
Add canned tomatoes, ground beef and spices, simmer for 20 minutes to blend flavors.
Add tomato-veggie mixture to the cooked rice, stir well and serve.
