Orzo, Asparagus & Pea Salad

Ingredients
200g orzo1/2 cup frozen peas1 bunch asparagus, woody ends trimmed, cut into 3 cm pieces1/2 cup basil leaves & 2 Tbl chopped basilGrated zest & juice of 1 lemon1 Tbl extra virgin olive oilPinch of caster sugar
Directions
Cook the orzo in a large saucepan of boiling salted water according to the packet directions. Add the peas and asparagus for the final 2 minutes of cooking. Rinse under cold water and drain well.

Place the orzo, peas, asparagus and basil in a large bowl. Whisk the lemon zest, juice, olive oil and sugar together then pour over the orzo and gently toss. Season with salt and pepper and serve.
