James D.'s Breakfast Sausage

Ingredients
1 lb. ground pork, 30% fat1 tsp salt1 tsp ground black pepper1 tsp Cajun seasoning1 tsp cilantro1 tsp garlic powder1 tsp crushed red pepper (or more)1 tsp Cayenne pepper (or more)1 tsp ground sage
Directions
Thoroughly mix all dry ingredients with ground pork. Make 10 patties. Wrap each patty with plastic wrap, store in Ziploc freezer bag. Cook in skillet for 5 min + or -. Recipe is for "mild" sausage. Add more crushed red pepper and cayenne if you want a hotter sausage.
