1 medium zuchinni.1/3 cup chopped red pepper1/3 cup chopped green pepper1/3 cup chopped onion1/4 tsp oregano1/4 tsp garlic powder2 tsp olive oil4 tsp grate parmesan cheese
Cut zuchinni lengthwise and scoop out seeds (leaving a shallow indent) reserve seeds. Chop onion, and peppers. Over medium heat cook zuchinnini seeds, onions and pepper in the olive oil adding oregano and garlic powder until tender. Let this mixture cool slightly and split between the zuchinni halves. Bake @ 350 for 30 minutes. Sprinkle 2 tsp of parmesan on each zuchinni and bake 5 more minutes until parmesan is brown. Serve warm.
