Chicken Etoufee

Ingredients
Boneless skinless chicken breast - 4Oil for saute2 red onions, chopped2 red peppers , chopped2 green peppers, chopped4 Roma tomatoes, chopped2 - 3 large garlic cloves, dicedCajun Spice 2 tbspchicken stock - one cup
Directions
preheat oven to 400deg.
Saute chicken in olive oil on each side, only until browned.
Transfer to oven safe tray and place in oven to finish.
In the same saute pan, scrap up browned bits and saute all vegetables and garlic, except tomatoes. Saute until softened.
Sprinkle 2 tbsp cajun spice and continue to saute for 2 minutes.
Add tomatoes and stock and cook down to reduce by half.
Season to taste and serve over chicken
