Tortellini Pasta with veggies in Alfredo Sauce

2 cups tortellini filled pasta, either spinach or cheese1 tablespoon canola oil1 large onion, julienned1/2 cup bell pepper strips3 cloves garlic, thinly sliced1/2 teaspoon salt (or to taste)1-2 tablespoons cider vinegar1/4 cup heavy whipping cream1/3 cup grated parmesan cheese1 tablespoon parsley, fine crushed1/4 teaspoon salt1/4 teaspoon black pepper
Boil tortellini in salted water until al dente. Drain and set aside.
In a large non-stick skillet over medium-high heat, saute onion and pepper strips in 1-2 teaspoons of the canola oil until sweated. Add garlic and cook until peppers and onions are translucent. Remove to a dish and keep warm.
In same skillet, add remaining oil and pasta and cook until pasta begins to brown. The will happen very quickly. Remove from heat and sprinkle vinegar over pasta. Toss well. Return to a lower heat and add peppers and onion, cream and cheese.
Stir until blended and heated through.
Serve with sauteed conecuh sausage or Chicken spinach sausage or fresh grilled shrimp.
