Popeye's Spinach Balls

10 oz frozen chopped spinach, thawed, drained and squeezed2 tbsp olive oil1 1/2 tsp garlic powder1 cup stuffing mix6 egg whites or equivalent in egg substitute1/2 cup onion, chopped/smalldiced1/4 cup Parmesan cheese1 tbsp pepper
Mix all ingreients and chill for a minimum of 2 hours, or overnight.
Roll into 1" balls and bake at 350 F for 20-25 minutes.
