Ingredients
2c Rice0.5c Brown rice4Tbsp cilantro0.5c lime juice1Tbsp EVOO1c onion1clove garlici can mexicorn - drained1 can black beans - drained1 can Rotel - drained2Tbsp cumin
Directions
Makes 4 servings
Mix together cooked rice, cilantro, and lime juice.
In a separate pan add EVOO, onion, garlic, and green chiles. Cook for 3 minutes and add corn, black bean, and rotel. Season generously with cumin. Simmer for 10 minutes or until juices are gone. Serve on top of cilantro lime rice with 2%mexican cheese and non-fat sour cream
