Beef and Asparagus Stir Fry

Ingredients

1 lb Flank Steak2 tblsp cornstarch2 tblsp flour2 cups asparagus cut into 1-2 inch pieces1 cup mushrooms diced 2 cloves garlic diced into tiny pieces3 tbsp scallions chopped1 tblspn ginger diced into tiny pieces4 tbsp lite soy sauce3 tbsp honey1 tbsp lemon juice1 tsp red pepper (or to taste)1 tsp black pepper (or to taste)1 tsp ginger
slice steak and toss with flour and cornstarch
mix last 6 ingredients into a sauce for later
Heat Wok or Pan, spray w/ pam and cook ginger, garlic and scallions until little brown
add meat and cook almost all the way
add vegetables and sauce
stir until done
Serve over brown rice for a healthy dinner.
If you chop the mushrooms real fine kids won't even know they are there. Red Peppers or Brocolli can be used instead of asparagus.
