French Potato Salad

Ingredients
4 red potatoes2 cups green beans1/4 cup green onion2 tsp Dijon mustard1 Tbs lemon juice3 Tbs olive oil2 tsp thymeSalt and pepper to taste
Directions
Boil potatoes in lightly salted water. Blanch green beans. Chop green onions. Combine dijon, lemon juice, olive oil, thyme and salt and pepper to make dressing. Toss everything together while still warm so the potatoes soak up the dressing.
