1 lb goat meat3 carrot, sliced1 celery stalk, sliced1 medium yellow onion, chopped3 gold potatoes1 clove garlic, minced1 tsp fresh rosemary1tsp fresh thyme2 cups watersalt and pepper to taste
Put 1/2 the olive oil in a pan. Season goat meat and sear. Put in slow cooker. Add the rest of the olive oil and season and sweat mire poix. Add to slow cooker. Add potatoes, thyme, rosemary, garlic, salt and pepper and water to slow cooker. Turn on high and cook 8 hours.
