Quick Turkey Sausage "Jambalya"

1 bag Vigo brand Red Beans and Rice1 turkey smoked sausages, sliced into coins1 clove garlic, minced1 cup green bell pepper, diced1 cup yellow onion, diced1 cup celery, diced1/4 tsp cayenne powderTabasco sauce, to taste
Makes 4 servings.
Prepare Vigo beans and rice according to the manufacturers instructions.
Slice turkey smoked sausage into 1/4" coins. Place in a hot cast iron or non-stick skillet and cook until the sausage is well cooked. Remove sausage from skillet.
In the same pan, sautee minced garlic, peppers, onions and celery until the onion is translucent. Season with salt, pepper and cayenne. Return turkey to skillet and toss to combine and add Tabasco sauce to taste.
Mix turkey/vegetable mixture with cooked rice and beans. Adjust seasoning as needed.
