Dudhichi bhaji (calabaza-chana dal-curry)

Ingredients
Bottle Gourd/Calabaza/ lauki/dudhi - diced 1" thick-4 cups * Sunflower Oil, 1 tbsp (remove) * *Black Mustard Seeds, 1 tsp (remove) * *Cumin seed, 1 tsp (remove)1/2 cup onion sliced * *chana dal, 0.25 cup (remove) * Salt, 1 tsp (remove) * Turmeric, ground, 1/2 tsp (remove) * *chilli powder, 1/2 tsp (remove) * *fenugreek seed, 1/8 tsp (remove) * *asafoetida (hing), 0.25 tsp (remove) * *Green chilly / Mirchi, 5 gram(s) (remove) * *Coriander, ground, 1 tsp (remove)
Directions
soak chana dal in hot water for 15-20 min
heat oil, add cumin, mustard, hing, chillies, fenugreek seed, turmeric, red chilli, let crackle
add dal, cook 3-4 min
add onions, cook till translucent
add 1/2 cup water and simmer until dal is cooked

add calabaza,
add some water, stir, cover with heavy lid and cook for 15 min till calabza is cooked through,
donot overcook- or it will turn bitter.
serve with chapati
