Mac and Cheese

Ingredients
Box of your favorite pasta1 block Sharp cheddar (aged is better)1 block Jack CheeseOnion diced3 tablespoons butter1 large clove Garlic pressed1 cup Half & half2 cups chicken broth2 tbsp flour1 tbsp nutmeg1 tsp red pepper flakesSalt and pepper to taste
Directions
Preheat oven to 350. Boil box of pasta according to pasta directions for al dente. Grate your cheese blocks. In a sauté pan melt butter then add onions. Cook on medium till translucent. Add pressed garlic. Cook about 2 more minutes. Sprinkle flour over the top and then stir around till pasty. Add chicken broth and half and half. Mix well. Add nutmeg, red pepper flakes. Include salt and pepper, fresh ground pepper is the best. With the burner on medium- low, add in the cheese just a small handful at a time mixing well. Leave about 1 cup aside but incorporate the rest into the cheese sauce. Spray nonstick oil on a casserole dish large enough to accommodate your pasta. Add your pasta to the dish and then pour the warm cheese sauce over the top. Take a spoon and mix through the pasta to incorporate the sauce. Top with the remaining cheese, cover with foil and bake for 20 minutes. Remove foil and continue cooking 10 minutes. My favorite thing to do is top this with crushed potato chips when you remove the foil then bake for 10 minutes.
