oatmeal muffin squares

Ingredients
oats 8ozwater 3 1/2 cupflour 1 lb 3ozbaking soda 1 1/4 TSPcinnamon 1 1/4 TSPnutmeg 1 1/4 TSPsalt 1 1/4 TSPmargarine 6ozbrown sugar 1 lb+2 ozsugar 1 lb+2 ozvanilla 2 1/2 TSPegg 1 cup plan yogurt 1/4 cupapplesauce 1/4 cupoats 3 ozflour 1/4 cupbrown sugar 1/4 cup packedmargarine 1/4 cup
Directions
1. place oats in a stainless steel bowl and pour hot water over them. let stand 20 minuter. do not drain.
2. combine flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
3. in a separate mixing bowl, using a paddle attachment, beat the margarine and sugars for 10 minutes. Scrape down the sides of the bowl. Add the vanilla, eggs yogurt, and applesauce. Beat for 3 minutes.
4. Add the oat mixture and blend for 1 minute on low speed. Add the flour mixture and blend for 1 minute. Scrape down the sides of the bowl.
5. For topping: Combine rolled oats, flour, brown sugar, and margarine and mix until crumbs are size of small peas.
6. Lightly coat each steamtable pan with pan release spray. Pour 7 lb patter into each pan and spread evenly. Sprinkle 1 3/4 cups of topping over each pan.
7 Bake until golden brown and muffin pulls away from sides of pan 35 minutes
