Orange Mashed Potatoes

5 large russet potatoes, peeled and chopped1 large sweet potato, peeled and chopped1 head of garlic, roasted, cooled, removed from skin2 Tbsp salted butter1 cup of lowfat milk14 cup fresh chives, chopped
In a large pot, bring 6 quarts of salted water to a boil. Add the sweet and russet potatoes. Bring back to a boil, and cook at least 10 minutes at full boil, or until russet potato pieces are easily pierced with a fork.
Drain the potatoes. Return them to the pot. Go to work on them with a potato masher, adding the butter and the milk. Don't overwork them, or they'll get gummy. When potatoes, butter and milk are blended and almost lump-free, stir in the roasted garlic cloves and chives. Salt and pepper to taste.
