Packed Salmon Cakes

Ingredients
12 oz cooked salmon, shredded (or canned)1/4 c chopped scallion1.5 Tbs Lemon juice1/8 tsp White pepper1/8 tsp Paprika1 tsp garlic, minced/dried or powder1/2 c mayo2 large eggs1/2 c chopped carrots1/4 tsp oregano2 c oatmeal1 c oatmealevoo
Directions
1. In large bowl, shred salmon, set aside.
2. Thinly slice scallion, add to salmon.
3. Chop carrots, add to salmon.
4. Mince oregano, add to salmon.
5. In a small bowl, add lemon juice, mayo, pepper, paprika, garlic and eggs, mix.
6. Add wet mixture to salmon mixture, mix thoroughly.
7. Add 2 cups of oatmeal to salmon mixture, blend until oatmeal is moistened.
8. Heat a large skillet over medium heat, at the same time, make 14 cakes, pat over the remaining oatmeal.
9. Add 2 Tbsp of EVOO to skillet, allow to warm.
10. Fry cakes, approxiamtely 4 minutes each side, until golden brown, adding more EVOO as needed.
