Tropical Sweet Potato Salad

3 sweet potatoes1 can Dole Pineapple chunks in juice (drained - reserve juice).5 cu mango1 banana1 apple1 celery stalk2 tbsp Hellman's RF mayonnaise2 tbsp Newman's Own Lime Viniagrette1 tbsp peanut butter
Cook potatoes in microwave until soft, remove thicker parts of skin and cool. Cut potatoes into chunks, salt lightly and mix with fruits and celery. In separate bowl mix together mayonnaise, a little reserved pineapple juice, lime viniagrette and softened peanut butter. Whisk until smooth and add a dash of cinnamon & ground ginger. Pour over sweet potato & fruits and stir carefully. Serve either chilled or at room temperature.
