Anna's Zuppa Toscana (Kale Soup) - 1 Cup Serving

1 lb Smoked Sausage3 Large Potatoes cut into 1/4 inch slices3/4 C Chopped Onion6 slices of bacon1 1/2 tsp Minced Garlic2 C Fresh Kale, Washed, Dried & Shredded2 Tb Chicken Soup Base1 Quart Water1/3 C Heavy Whipping Cream or Milk. (Anna uses evaporated milk1-15oz Can of Black Eyed Peas
Makes 8 1-cup servings.
Place sausage on a sprayed baking sheet and bake at 350 degrees for 25 minutes
Cut Bacon in 1/2 inch pieces and fry in a large sauce pan or dutch oven. Remove bacon and leave grease.Add onions, saute for 3-5 minutes.
Add garlic and saute another minute
Drain all grease and discard it.
Add Soup Base, Water, and potatoes. Bring to boil and simmer for about 10 minutes. Potatoes should still be a little crisp.
Add Bacon, sausage, Kale, black-eyed peas, and milk. Simmer 5 minutes. Serve
(Anna says it is better if you let it set overnight in the refrigerator and reheat to serve)
