Bran Sandwich Bread

2 Tablespoons Unprocessed Wheat Bran1 medium fresh egg, beaten
Measure out bran and place in a small bowl. Beat in the egg with a whisk or fork until all the bran is moistened. Allow mixture to stand for 10 minutes.
Spray a non-stick skillet with Pam (as needed) and heat to medium. Pour the bran mixture into the skillet and quickly spread into a fairly thin rectangle. Turn heat down to low and cook until bubbles begin to appear, then turn bread over to brown on the other side. Remove and cool before use.
Each bread piece can be cut in half length-wise and used to make a chicken, turkey, sliced roast beef, egg salad, etc. sandwich.
For a tastier bread, try adding dill weed, onion powder, garlic powder, or oregano as desired.
Makes 1 serving the size of a slice of sandwich bread.
Note: this recipe can easily be doubled, but it is advised not to double beyond 2 servings at a time.
