Leek, Pea & Potato Soup

3 leek24 oz potatoes1 1/2 tbsps olive oil1 tbsp canola oil5 cups vegetable broth2 cups peas1/2 tsp parsley3 dashes salt1 dash pepper
Cut leeks (white part only) lengthwise into quarters.
Cut peel and quarter potatoes. Then thinly slice.
Cook leeks & potatoes in oil on low in a large saucepan...stirring occasionally until veggies are softened.
Add the broth & bring entire pot to a boil. Simmer, covered, for 10-15 minutes or until potatoes are very soft.
Stir in peas, parsley and (optional pinch of dried mint). Season with salt & pepper.
Simmer for 5 more minutes.
In blender or food processor, puree soup until very smooth & serve hot.
