Miso Soup

1/4 cup miso paste3½ cups chicken stock8 oz firm tofu4 TBL chives, chopped2 sliced shitake mushroomsSalt & pepper to taste
In a large pot, heat the stock to steaming but below a simmer. In a small bowl, whisk the miso into 2 tablespoons of the slightly warmed broth and blend well. Gradually incorporate into the pot of stock and bring to a simmer. Add the tofu and mushrooms and maintain at a simmer for 3 to 5 minutes. Season to taste with salt and pepper (or soy sauce) and garnish with chives.
