Ingredients

8 Cups of Swanson Chicken Broth
1 Chicken Breast, cut into small pieces
3/4 Cup Frozen Peas & Carrots
2 Tbsp Kikkoman Soy Sauce or Reduced Sodium Soy Sauce
2 Tbsp Corn Starch
2Tbsp Water
2-3 Green onions diced
2 Tbsp of Dry Sherry
3 Eggs, Beaten
1 Tbsp Sesame Seed Oil
Directions
Combine chicken broth, dry sherry and soy sauce in a pot. Bring to a boil, reduce heat and simmer for 2 minutes.
Add the chicken and frozen peas and bring to a boil. Simmer for 3 minutes.
Mix cornstarch and water in a bowl until smooth and add to the pot. Simmer for 2-3 minutes or until the soup gets a bit thicker and the chicken is cooked through.
While stirring in one direction, add the beaten eggs slowly. Add the green onions and sesame seed oil, stir and serve.

This was awesome! It tastes just like the chinese resturant I love. I omitted the sherry, soy sauce and seaseme oil (didn't have on hand) I did use a touch of teryaki sauce to make up some flavor missed by soy sauce. Can't wait to make again! Next time will stir slower for bigger chunks of egg - 1/25/10
