Oatmeal Coffee Cake (base)

Ingredients
1/2 cup Oatmeal- Plain1/2 cup water -- hot/boiling1/2 cup Whole Wheat Pastry Flour1 tsp Baking Powder1/2 tsp Cinnamon1/2 cup Sugar1/4 cup Coconut Oil 1 Egg
Directions
Makes 8 servings from an 8-inch round.
Preheat oven to 350 F.
Add hot water to oatmeal; let sit while preparing the rest
(perhaps 10-15 minutes)
Prepare 8 or 9 inch round pan with oil or other
Mix dry ingredients
Cut in coconut oil
Mix in egg; add oatmeal mixture
Cook for 30 minutes.
Add topping when appropriate: for dry, cumble topping add at the beginning. For wet topping, add at about 15 minutes (may need a longer overall cook time).
