Mushroom Polenta

Yellow Cornmeal, 2 cup Mushrooms, canned, 2 cup Olive Oil, 2 tbsp Garlic, 2 cloves Onions, raw, .5 cup, chopped Beef stock, home-prepared, 5 cup Water 2 cups
Saute onion in oil, then add garlic and cook for about 30 seconds. Add mushrooms and cook together for 3 minutes. Add stock and water, and bring to a boil. Slowly add corn meal and whisk until well blended. Bring to a simmer and cook for 10 minutes or until thickened, stirring constantly. Serve as is, or pour into an 11x9 pan and spread evenly. Cover with plastic wrap and refrigerate. You may cut into pieces and pan fry to heat up.

This was sooo easy and sooooo good. I used fresh button mushrooms, thin sliced and added to onion and garlic. I also used just one cup of water with 4 cups organic low sodium veg. broth to reduce the salt . A little shredded parm on top finished it off nicely. Comfort food exempliflied! A KEEPER! - 3/13/11
