Cheesy Smashed Potatoes (w/ Cauliflower)

1 lb. potatoes (about 3-4 medium) cut into chunks1 cup bite-sized cauliflower florets1/4 cup fat-free sour cream1 cup reduced fat cheddar cheese
Place potatoes and cauliflower in large saucepan. Add enough water to cover. Add salt to water.
Bring to boil on high heat. Reduce heat to medium; simmer 20 min or until vegetables are tender. Drain; return to pan.
Add sour cream; mash until vegetables are light and fluffy. Stir in cheese.
Makes 6 servies, 1/2 cup each.
