Ingredients
1 pound of large lima beans dry1large or 2 small onion1 large or 2 med stalks of celery2 raw carrots or more to taste preference2 Tbsp. fresh herbs: oregano, parsley, etcopt. 2 T. dehydrated soup greens
Directions
Soak beans overnight. Drain and rinse beans..reserve.
Place ham bone (opt.), ham, onion, carrot, celery in large pot and saute using the inherent ham fat or a little olive oil, if necessary untill onion is transparent.
Add 6 - 8 cups of fresh water, beans, and herbs...
(Opt. Add two raw potatoes.) Simmer till done.
