Egg plant - 3 cups (small-medium fruit)Zuccini - 6 cups grated (2-3 zucchinis)Ground Turkey - 910 gramsCarrots - 3 sliced into coinsPotato - 1/2 mediumMushrooms - 3 cups slicedTomato Paste - 1 canSalt - 1/2 tsp Oregano - 1.5 tspParsley - 1/2 tbsp Cauliflower - 2 cups choppedBroccoli - 2 cups choppedOnion - 1 medium Garlic - 1.5 tspOlive Oil Cooking Spray (calculated into calories)
Prepping the egg plant:
Start by slicing the egg plant thinly. Sprinkle both sides of the slices with salt and let sit for at least 20 minutes, before rinsing off all of the salt.
Heat the oven to 300-350 F. Spray an oven safe dish with a little olive oil cooking spray.
Layer the ingredients in the oven dish, starting with a layer of egg plant, and ending with a layer of tomato paste. Spices may be sprinkled over intermittently. I didn't calculate cheese into the Nutritional info, but it may be sprinkled over top. Cook for 30-40 minutes, until done.
Makes 6 large and juicy servings.
