Spicy Basque-Style Chicken

1 tsp smoked paprika1/4 tsp black pepper1 lbs skinless, boneless chicken breat tenders2 tsp olive oil2 tsp minced garlic1/4 cup sliced green olives2 (10 oz) cans diced tomatoes and green chiles, undrained
Combine paprika and pepper sprinkle evenly over chicken. Heat oil in a large nonsick skillet over medium-high heat. Add chicken to pan; cook 4 minutes. Add galic to pan; cook 30 seconds. Turn chicken over. Add olives and tomotoes to pan; bring to a boil. Reduce heat, and simmer 6 minutes.
Yield: 4 servings (serving size: 3 ounces chicken, about 1/2 cup sauce.
