Ricotta Muffins

Ingredients
2 C part skim Ricotta4 eggs6-8 pkgs. Splenda or Truvia1 tsp. vanilla
Directions
Heat oven to 400 * , Blend all ingredients well. Sparay muffin pans with Pam and divide mixture evenly between cups. Bake 20 to 30 minutes or until toothpick inserted into center comes out clean.
MAKES 12 servings
