One medium closed-cup mushroom, washed and sliced2 T chopped sweet peppers2 T grated mild cheddar1 large egg1 T salted butter
Clean and chop veggies. Grate cheese. Melt butter in a small frypan or omlette pan over medium heat. Beat egg well with a fork in a small dish and pour into pan. Quickly swirl the pan to spread egg. Quickly sprinkle veggies and cheese. Cover with lid and cook for two minutes or until cheese is melted. Gently lift one side of omlette and flip over the other half. Hold briefly in this position by tilting pan. Gently lift bottom half of omlette and slide onto plate. Add salt and pepper to taste.
