Directions
makes 48 0.75 inch servings from loaf pan
Blend butter sugars and whip until creamy
Add eggs
Add pineapple and vanilla
sift the flour and soda and salt and spice together
Mix all fuits and nuts and rinse to lower sugar content
Add 0.5 cups rum
mix everything together and bake in loaf pans 4 ea.
bake at 275 for 3.5 hours with water pan in oven to prevent caramalizing of the abundant fruit
