1 large can diced tomatoes1 jar favorite marinara sauce1 clove fresh garlic, crushed1 pkg. frozen spinach, thawed and drained8 ounces provolone cheese, sliced
Preheat oven to 350. Combine tomatoes, marinara, garlic and spinach in a large sauce pan and bring to a simmer for 20 minutes. Ladle into oven-proof bowls covering each with two slices provolone. Place in the oven on a cookie sheet just until melted – about 5 minutes. Serve with crusty gluten-free bread or topped with gluten-free croutons.
