Pineapple Cookies

1/2 C Shortening1 C Sugar1 Egg1/2 C Crushed Pineapple (drained)1 Tsp Vanilla Extract2 C Flour2 Tsp Baking Powder1 Tsp Baking Soda1/2 Tsp Salt, Lite, MortonNutmeg
Cream shortening and sugar together in large bowl. Then mix in the egg and vanilla extract. After that is mixed in well then add the crushed pineapple. Put aside.
In a separate bowl, mix the flour , baking powder, baking soda and the salt together. Once this is mixed well, then add this dry ingredient mixture to the wet mixture from above.
Spoon (1-level tablespoon) onto greased (spray with Pam cooking spray) cookie sheet. Sprinkle with nutmeg and mash down. Then bake at 325 degrees for 12 - 14 minutes.

You can also try them with some flaked coconut, smashed down, along with the nutmeg, before baking them.
