TX_3XDAD's Socca Quickbread (1/8 of a round)

2C chickpea (garbanzo bean) flour2C water1/2t salt (kosher)2T herbs de provence2T olive oil (for pan)
1. Take 14"-16" cast iron skillet or analog and put into oven. Set to preheat to 475 degrees.
2. Mix all ingredients except oil. Use a whisk; it'll be a loose slurry.
3. When oven's ready, coat the skillet with the oil. Heat until fragrant (not smoking!!!).
4. Add batter & bake for 35 minutes. It's done when the edges start to blacken and pull back from the sides.
5. Remove with a spatula and put onto a large plate or pizza pan to cool. Cut with a pizza cutting wheel.
Serve with a dip of olive oil., herbs de provence and kosher salt (not included in recipe).
