SWEET COUSCOUS & TOMATO SALAD

Ingredients
* Couscous, 4 cup, cooked* Chick Peas, 2.5 cup* Red Ripe Tomatoes, 2 medium whole* Scallions, raw, 5 medium* Garlic, 2 clove* Basil, 15 leaves* Lemon Juice, 50 mL* Extra Virgin Olive Oil, 6 tbsp* Honey, 0.25 cup
Directions
Combine the peas, fluffed couscous, tomatoes, scallions, garlic, and basil.

In a bowl whisk the lemon juice with salt and pepper.

Drizzle in the olive oil, constantly whisking, until it is completely incorporated.

Toss the salad with the dressing and honey and serve.

Serves 8, about 1 cup each.
