3 potatoes2-4 carrots 1 small onion4 TBS oil
cut all vegetables, toss with the oil, add salt and pepper to taste, place in pyrex pan, roast in 400 degree oven for 45-60 mins.

This also works well if you substitute or add whole cloves of garlic for the onion.
