Ingredients

2 parsnips2 carrots1 large sweet potato2 tbsp evoo1 tsp granulated onion1 tsp salt1 tsp black pepper, ground1 tbsp dried rosemary
Peel (if desired) all the vegetables and cut into approx 1" cubes. Toss with remaining ingredients. Place in a single layer in a baking dish to get crisp edges on all the veg. Bake at 400F for 40-45 minutes.
This recipe would work well with just about any type of root vegetable -- potatoes, beets, turnips etc. would all make great additions/substitutions.
