Garlic Chicken Tapas

Ingredients
3 chicken thighs, skinned and chopped into bite-size pieces1 medium portabella mushroom, chopped into bite-size pieces10 cloves of garlic - 5 peeled and sliced; 5 smashed (not peeled)6 Tbs. olive oil1/2 c. low sodium, chicken broth or stock1/4 c. brandy or other alcohol
Directions
Heat olive oil in a deep pan. Brown garlic slices and reserve for garnish. Cook chicken in oil until brown. Add mushroom, unpeeled garlic and liquids. Cook on medium heat until most of the liquid is gone. Serve hot with garlic chip as garnish.
