Hummus Veggie Wraps

Ingredients
2 large eggs4 tbsps low-fat cottage cheese3 tbsps hummustomato slicesbanana peppers
Directions
Break eggs into a small bowl & whisk until yolk and whites are combined.

Pour half of eggs into a pre-heated non-stick fry and roll around the bottom of the pan like a crepe. Cook until eggs are no longer 'wet' (20 seconds to a minute) and flip out onto a plate. Repeat with second half of eggs.

Spread half of hummus on each of the eggs. Top with half the cottage cheese, tomatoes, and banana peppers. Roll up and serve.
