plantain and lentil stew

1 cup lentils1 tbsp olive oil1 sm onion, chopped2 cloves garlic, chopped1 lg tomato, chopped1.5 cups pineapple chunks2 plantains, peeled, sliced1 tsp kosher salt Cooked rice - optional
Makes 4 servings
1. cook lentils until just barely tender, approx 30-35 minutes, drain, reserving liquid
2. Heat oil over medium heat, add onion and garlic, cook till onion soft, about 4-5 minutes. Add tomato and cook a few minutes. Add lentils, about 1 cup of lentil broth, pineapple, plantains, and salt.
3. Cook about 20 minutes until stew thickens slightly.
Optional: serve over rice
