Mushroom Gravy

8 oz. cremini mushroomsm sliced2 cloves garlic, minced1 tsp. dried thyme1 tbsp. olive oil2 1/2 c. vegetable stock2 tbsp. arrowroot powder2 tbsp. tamari1/4 c. Red Star Nutritional Yeast Flakes
In a medium saucepan, cook the mushrooms, garlic, thyme, salt and pepper in the olive oil. Let cook until the mushrooms release their juices, about 5 minutes.
In a small bowl, whisk together 1/2 c. vegetable stock with the arrowroot flour. Add to the mushrooms along with the tamari and the rest of the stock. Bring to a boil, lower heat and stir and cook 15 minutes until thickened. Add the nutritional yeast and stir until it dissolves.
