Crazy Carrot Cake

2 cups all purpose flour1 cup sugar1 tsp salt2 tsp baking soda1 Tbsp Cinnamon1 tsp ginger1/2 tsp nutmeg1 Tbsp Vanilla extract1/2 cup canola oil6 Tbsp white vinegar1 cup water2 cups grated carrots*1/2 cup seedless raisens1 cup chopped walnuts
Preheat overn to 400 degrees F. Mix dry ingredients in a medium sized bowl. Make a well in the center and add wet ingredients. Mix well and add carrots and walnuts fold in until well bended. It is ok if there are small lumps, DO NOT use electric mixer or over mix. Spray a non stick bundt pan with cooking spray generously, add batter and cook for approx. 45 to 50 minutes. Let cool in the pan for 10 minutes and then remove to cake plate and let cool. Top with glaze if desired. (see kay's easy cake glaze recipe)
