Better than Olive Garden's Chicken Gnocchi Soup

3-4 boneless skinless chicken breasts cooked and chopped5 slices bacon cooked and chopped1 med onion chopped1 celery stalk diced1 large garlic clove minced1 carrot grated1 large portabella mushroom cap chopped2T olive oil1/4 c. white wine3 c. chicken stock1 jar bertolli's alfredo sauce2 c. asparagus sliced in 1" pieces at an angle1/4 t. nutmeg2c. gnocchi1 c. fresh spinach chopped
makes approx 8 1.5 cup servings
Heat olive oil in large sauce pan and sautee onions, celery, garlic, and carrots until onion is translucent. Add mushrooms and sautee for 2 min. Deglaze pan with wine- cook for 2-3 min, add chicken stock, alfredo sauce, asparagus, nutmeg, chicken, bacon. Bring to boil and add gnocchi cook for 3-4 min then add chopped spinache, decrease heat and simmer for 10 min.
Serve hot with salad and breadsticks
