Gingerbread Cookies

1 Cup (16 Tablespoons) Crisco Shortening1 3/4 Cup Brown Sugar1 1/4 Cup white sugar2 Tablespoons Dark Molasses6 Egg Whites3 tsp Canola Oil4 Cups White All purpose Flour2 Cups Whole Wheat Flour2 tsp Baking Soda1 tsp Salt1 Tablespoon Ground Ginger4 tsp Cinnamon2 tsp Allspice1/2 Cup 1% Milk
Cream together first 4 ingredients. Gradually blend in egg whites and oil. Beat until light and creamy.
In a separate bowl, stir together dry ingredients Add to creamed mixture alternately with milk. Mix only until dough forms a ball. Cover and chill for 1 hour. Roll out dough 1/4 at a time on lightly floured surface and use 2x2 cookie cutters to make shapes. Bake at 350 degrees F. for 8-10 minutes or until firm. YIELD: approximately 110 cookies.
