Low Carb Cauliflower Cheddar Soup

Ingredients
3 Tbl. Butter1/2 medium onion, chopped1 can Campbells soup at hand, cream of chicken1 can chicken broth1 head cauliflower, broken into small florets (can sub frozen cauliflower)1 Tbl. Old Bay seasoning. 1 Cup heaving cream1 Cup cheddar cheese, shredded
Directions
Saute onions in butter until translucent. Add soup and broth, then add cauliflower and Old Bay seasoning. Let cook until cauliflower is soft, about 20 minutes.
Take pot off burner.
Using a stick blender (or you can transfer to a blender/food processor), blend until cauliflower is mashed well and soup becomes creamy. Add cream, cheese, and salt/pepper to taste.
Return to low heat until heated through.
Six servings.
