french toast casserole with ezekiel cinnamon raisin toast

Two loaves (28 slices) Ezekiel Bread-cinnamon raisinTwo sticks of light butter (I used Land o Lakes w/canola oil)2 cups egg beaters2 cups 1% milk1/2 cup light brown sugar1 tbsp ground cinnamonoptional addl. 4 tsp brown sugar for topping (in calculation)
melt butter, brown sugar and cinnamon on stovetop-constantly stirring until sugar is melted
drizzle 1/4 of mixture in 9x13 baking dish
lay one layer of bread (I fit 2 rows of 4 pcs and 1 row of half pcs)
again drizzle and layer, drizzle and layer
then top with last 1/4 portion of mixture.
Mix egg beaters, and milk and pour over bread.
Cover with foil and refrigerate overnight.
Next morning bake at 350 for 30 minutes covered. Then uncover, sprinkle additional 4 tsp light brown sugar on top (for crispy goodness) and bake uncovered for an addition 15 minutes. Serve and enjoy.
Makes 10 portions.
